Countdown to a new baby is on! Only a few more weeks until we meet our new little guy, and I am of course so excited I can hardly think of anything else! I’m taking these last few weeks to clean my house, spend some special time with my firstborn in is last days as an only child, and to make food for my freezer. While the first few months with a newborn are a blur, one thing that I do remember clearly is that I didn’t have a whole lot of extra time to whip up dinner. I had stocked my freezer ahead of time, something I was SO happy to have done, and we gratefully accepted and enjoyed casseroles and soups from wonderful friends and family… the first time I made a meal on the fly I think my husband was in shock, he hadn’t tasted anything that hadn’t been frozen in quite some time. I’ll try to do better this time around!!!
To save myself from doing double duty, my plan is usually to make something freezer friendly for dinner, and make 1 or 2 extra batches to put in the freezer. I label them with the date, name, thawing and cooking directions, so that my husband will have all the info if I’m busy. I also keep a running list of what and how much I have in the freezer, and mark them off as we eat them. That way we don’t have to go digging around mystery packages to find what we want.
I have some new freezer recipes coming up very soon, but I thought first I’d share with you a few old favorites and recipes from others I’ve been stashing in the freezer.

Sweet Potato and Onion Soup – Soups are fantastic freezer meals! This one keeps a great texture even after thawing.
A great egg strata freezes perfectly for breakfasts!!
