My poor husband has not been able to shake this winter funk that has been going around! The rest of us have (cross your fingers) recovered but his is just hanging on. I’m combating this cold and flu season with lots of fruits, vegetables, and antioxidents this year, trying to boost our immune systems as much as possible!! So many people I know got fancy blenders for Christmas so if that’s you, here’s a recipe for your new toy! If not, fear not I have a regular blender and its just as delicious.
Smoothies and juices are a great way to pack in a ton of produce in a small package, and they’re portable as well! I’ve got a ton of smoothie recipes, but here’s what I made this morning! A lovely gem from my 11 Day Real Food Detox program! Don’t be fooled by the bright green color, those strawberries are hiding in there sweetening things up nicely. In fact my 2 year old ate this with a spoon and called it “Ice Cream” something I plan on reminding about him later on in life.
Feel free to use blueberries, raspberries, or whatever you’d like. You could bulk up the protein with some almond or peanut butter or even throw a frozen banana in the mix.
GREEN BERRY BLISS SMOOTHIE
1 ½ cups coconut milk, almond milk, milk, yogurt or orange juice (or a combination)
½ cup berries (I used strawberries)
1 cup spinach
1 handful parsley
1 tablespoon flax seeds
1 teaspoon vanilla extract
1 inch piece of ginger
1 teaspoon honey or stevia to taste
Put everything in your blender and blend on high until desired texture.
