Lemon Mousse – I’m sorry chocolate, it’s not you it’s me… 1

This post is almost blasphemous… here it is the day before Valentine’s Day, chocolate’s day to shine and I’m telling you about not a chocolate mousse, but a competitor!!!

Don’t worry friends, I haven’t lost my love of chocolate, but this year winter has been so long, and it has snowed so much that I just need a little sunshine in my life.  A little warmth.

Besides, this mousse is so delicious, simple and straightforward, you are going to have a hard time not making it every day.  So I will apologize in advance for your new addiction!

Lemon Mousse

Lemon Mousse

Serves 6-8

1½ cups heavy whipping cream
8 oz mascarpone cheese (I have also used yogurt cheese, which is fantastic and you can learn how to make here)
½ cup sugar (I used evaporated cane sugar)
¼ cup fresh lemon juice
zest of 1-2 lemons (depending on how lemony you like your mousse)

Beat whipping cream with a mixer until it forms stiff peaks and set aside.

In another bowl whip mascarpone, sugar and lemon zest with a mixer until well blended. Gradually pour in lemon juice until mixture is smooth.

Gently fold whipped cream into cheese/lemon mixture until well combined. Spoon into individual bowls and chill for 1 hour, or you can make them a day ahead of time. Don’t worry yours will be prettier than mine!

These would be wonderful with a few berries strewn on top, raspberries, strawberries, or even blueberries. You could also throw on some toasted coconut or nuts for a bit of crunch! It also makes a great tart or pie filling or a surprising interior for cream puffs!
