Sweet Potato Soup

This month I’ve been working hard on a new program for my wellness coaching clients.  Over the last year I’ve met with many people one on one to work on their wellness goals, and to boost their quality of life.  It’s been a totally energizing and rewarding experience.  There’s nothing like seeing someone revitalized and to think that cooking and eating real food can make some of the changes I’ve seen is just incredible!

One thing that I’ve noticed is that even though my clients issues range from fatigue to weight to gastrointestinal issues and more, one thing that helps them all is slowing down, cooking more, and listening to their body to figure out it’s unique needs! Sounds super easy right? Well where oh where to begin?

So I’ve spent the past month or two putting together a program to help do just that.  A detox, not the kind that movie stars make the news with because they should by all rights be fainting on the floor from lack of nutrients, but a break from the food clutter, an 11 day oasis where you eat real foods, eliminate things many people find irritating or are allergic to, and listen to your body.  I’m calling it the 11 Day Real Food Detox. 

This is one of my favorite recipes from the program, so comforting and refreshing at the same time.  So whip yourself up a bowl, and take a look at the detox.  Maybe you could use a break as well!

Orange Scented
Sweet Potato and Onion Soup


1 tablespoon extra-virgin olive oil
1 yellow onion, thinly sliced
1 clove garlic, minced
2 cups broth (chicken or vegetable)
2 large oranges, juiced
1 carrot, chopped
1 sweet potato, peeled and chopped
2 tablespoons parsley, chopped
Salt and pepper to taste

ASSEMBLE THE SOUP. Heat a large pot over medium-high heat. Add oil followed by sliced onion and garlic. Sauté 3 minutes until fragrant. Add broth, orange juice, carrot, sweet potato, parsley, salt and pepper. Cover pot and let simmer 15-20 minutes until potatoes are soft.
Remove from heat and place mixture in blender. Remove the vent to allow steam to escape. Cover the hole in the top with a clean towel and blend until smooth and serve.
